Established in 1867, Buyu Shuzo 武勇酒造 is located in Yuki City within the Ibaraki Prefecture.
During the 170 years in the town of Yuki, the brewery has experienced many hardships (several World Wars, the Great East Japan Earthquake and COVID19). Bravery and Valor has overcome many difficult times over and over again. Buyu Shuzo are proud of the fact that no matter how difficult the times may be, they never compromise and continue to pursue the production of delicious sake.
The brewery meticulously chooses their ingredients including using sake brewing rice instead of edible rice and Kinugawa River's soft water soft made from melted snow in the mountains of Kawaji Onsen in Nikko City Tochigi Prefecture.
It also uses the three season brewing method to increase the amount of brewing compared to a short term one season brewing, this allows fermentation to be achieved to their satisfaction.
