Byakko is the flagship "Crystalline Sake" from SAKE HUNDRED, a Junmai Daiginjo brewed by Tatenokawa in Yamagata. Its hallmark is an extreme rice polishing ratio of 18%, using the specialized "Yukimegami" rice. This process takes over 200 hours, resulting in a sake of unparalleled clarity, purity, and a delicate balance of sweetness and umami without any off-flavors.
Aroma:
The profile is fresh and fruity, led by notes of crisp apple and pear. These are layered with elegant white floral scents such as lily and chamomile, complemented by botanical and herbal nuances. When aerated, the fragrance opens up further into a bright, muscat-like elegance.
